RECIPE: Gebrannte Mandeln (Sugar roasted almonds)

I visited the Christmas market in Germany and smelt everywhere the sugar roasted almonds and really wanted to eat them, create them, cook them, have them at home…

You need:

  • 200g sugar
  • ½ teaspoon cinnamon
  • 10g vanilla sugar
  • 100ml Water
  • Some red food colouring (if you want)
  • 250g whole almonds

Cook sugar, cinnamon, vanilla sugar and water in a pan. When the mixture is hot enough, add the almonds and the food colouring (if you want). Cook till the water is absorbed. Let the sugar melt till the almonds are glazed, taking care that the mixture doesn’t scorch. Dump the almonds onto a sheet of baking paper, spread them out and let them cool down.
